When you step away from the din and bustle of Teramachi Street, in the center of Kyoto, a quiet and calm space is awaiting you.
Cafe B no Kaidan offers signature Japanese dishes, healthy rice in *Japanese soup stock ( dashi chazuke ) with vegetables grown in Kyoto ( kyo-yasai ) and Japanese sweets in a warming space styled like a traditional Japanese home.
*Japanese soup stock is made by simmeringdried bonito flakes ( katsuobushi ) and high quality dried kelp ( konbu ).
The stock has great flavor and umami. Although it is made with fish, it is not as fishy as you might imagine.
The ingredients that we serve in our café, such as vegetables grown in Kyoto ( kyo-yasai ), wheat gluten ( namafu ), dried kelp ( konbu ) andfreshly shaved dried bonito flakes ( katsuobushi ) are available at Nishiki-ichiba. Nishiki-ichiba, called the kitchen of Kyoto, is located near the café. These ingredients make great souvenirs from Kyoto.
